I was trying to think of something different to make for dinner tonight and decided to try and make a low carb meatball.
Here's what I came up with...they were really tasty and I have some leftover for lunch tomorrow.
Meatball Ingredients:
2 lbs of ground beef (I used extra lean beef, but you could use sausage, turkey or a mixture)
1/2 c grated parmesan cheese
1 Tbsp seasoning salt
2 eggs
minced onion (I used dried onions about 3 or 4 shakes)
black pepper to taste
Worchestershire sauce (about 3 or 4 shakes)
1 Tbsp dry mustard
3 Tbsp milk
Preheat oven to 375°
Mix it all together until eggs are well incorporated into mixture. Roll into golf ball size balls.
Heat a skillet and add about 2 Tbsp olive oil. Brown the meatballs on all sides.
Line a baking sheet with foil and place meatballs on baking sheet. Bake for 15-20 minutes
Mushroom Sauce Ingredients:
1 pkg Pioneer Brown Gravy Mix
1/2 c mushrooms
1 Tbsp Worchestershire
1 Tbsp butter
While meatballs are baking make a brown gravy. (I cheated and used a package of Pioneer Brown Gravy)
Make the gravy as directed on packaged. Saute the mushrooms in butter. Add mushrooms and remaining ingredients to gravy.
Remove meatballs from pan and add them to the gravy, toss them to coat.
Serve over brown rice or noodles
