What's for dinner???

"What's for dinner"?  Don't you hate that question?  I sure do.  I have all these wonderful recipes that I would love to try, but when cooking for a family it's really hard to have something that everyone loves or just likes okay for that matter.  That's when you fall back on the box meals like Hamburger Helper (yuck, I've never been a fan, but they like it) or run by the closest fast food shop on the way home from work.

Now, that I'm a housewife and home all day, well, most days.  I have more time to prepare better, healthier meals.  I still have the recipe poopers in the house though.  Hubby, doesn't like anything called a casserole. So, I just don't call it that. lol.  He also wants everything crispy or fried or well done.  My son Dave will eat almost anything except, eggs and fish.

So, what's for dinner?  Tonight we're having Crispy Buttermilk Chicken and Rice

Ingredients:
4 chicken breasts
2 cups buttermilk (I keep dry buttermilk on hand to mix up when needed)
1 egg
3/4 tsp onion powder (divided)
3/4 tsp cayenne pepper (divided)
1/2 tsp salt
2 tsp black pepper
1 tsp celery salt
2 Tbsp oil
1/2 c flour

Combine buttermilk, egg, 1/4 tsp onion powder, 1/4 tsp cayenne pepper.  Place chicken in a large zip-loc baggie and add buttermilk mixture.  Place in refrigerator for at least 4 hours.

Preheat oven to 425°  Remove chicken from bag and discard buttermilk mixture.  Salt chicken, mix together remaining onion powder, cayenne pepper, black pepper, celery salt and flour in a shallow pan.  Dredge chicken in flour lightly and shake off excess.

Add oil to skillet and heat to med-high.  Saute' chicken on both sides.  If you have an oven proof skillet, use that and pop it into the oven for 10-15 minutes.  If not, transfer chicken and drippings to an 8x8 baking dish. Serve over brown rice, add a veggie and Enjoy!
